Chipotle Chicken Pizza

We love pizza but most delivery pizzas are full of processed ingredients, loaded with fat and high in calories.  This is our healthier version but with tons of flavor because we choose our own ingredients.

Ingredients:

whole wheat pizza dough
2 boneless skinless chicken breasts, cooked
1 can mild enchilada sauce
Chipotle Tabasco to taste
1 small yellow onion, sliced
1 bell pepper (red, orange or green)
3 cups reduced-fat Mexican blend cheese
deli- style Jalapenos to taste

Season chicken breasts liberally with salt, pepper, garlic powder, and chili powder. We grilled the chicken, but you can cook it any way you like.

Prepare pizza dough as instructed. We use a pre-made wheat pizza dough available at most Publix stores upon request from the bakery.

Heat enchilada sauce in a small saucepan on low heat. Add Chipotle Tabasco sauce to taste. Allow to cool before spreading on pizza dough.

Slice onion, bell pepper and cooked chicken. Top the dough with the sauce, onion, peppers, and chicken. Cover with cheese and jalapenos on top.

Our pizza went into a preheated 400 degree oven for 23 minutes.
